I’ve always been fond of Honey Jumbles. They conjure up everything good in a biscuit - the two words in the name, to start with. I mean, the essence of sweetness and cuteness right there. Honey is one of my favourite words (I even named one of my favourite chooks Honey, so that’s saying something. And I have a lovely friend called Honey too!). And jumble - well that’s old fashioned and reminds me of childhood and ‘jumble sales’ - loved those!
Then there’s the spices. Spices in a bickie are just so good. I think it’s my Belgian heritage coming through but give me a gingernut or a specculas or a honey jumble and I’m as happy as Miss Piggy in mud!
Oh last but not least, a nice generous scraping of pretty pink and white icing. Yes, icing is definitely the ‘icing on the biscuit’ if you ask me;) I’m an icing gal through and through.
Actually, might I just add one other thing about these bickies. Their shape. Curves are so gentle and aesthetically pleasing. A curved bickie for the win!
Oh, oh, oh, hang on, one more thing! Come on, humour me. These are such an old fashioned recipe. Old fashioned classic recipe I should say. They have stood the test of time. They’ve out shown shortbread creams and Kingstons, hands down.
So there you go, Honey Jumbles are an all round perfect bickie!
I hope you enjoy this recipe of my Nan’s. I had to steal the glace icing recipe from Taste (so thank you Taste for that), because for some reason Nan’s recipe assumes we know how to do glace icing. Go figure. Another thing I should have asked her about.
